Banana Muffins with Yuzu Icing

1.5 cups almond meal
1/2 cup potato starch
1/2 cup raw organic sugar or sweetener of you choice
1 tsp bicarb soda
1/4 tsp sea salt
3/4 cup nut or seed milk
1 tsp vanilla extract
2 ripe bananas, mashed
icing
2 yuzu, zest and juice
1 cup organic icing sugar
2 tbsp coconut butter, softened
Preheat oven to 180 C degrees. Prepare a muffin tray by lining with muffin cases.
Place all dry ingredients into a mixing bowl. Mix until well combined. Add the remaining wet ingredients and mix until combined. Dollop into prepared muffin cases and bake for 35 - 40 minutes or until golden and cooked through. Set aside to cool.
To make the icing, add all ingredients to a small mixing bowl. Mix until well combined. Drizzle over cooled cakes and enjoy x
