bounty lattes with lucuma chocolate sauce

400ml coconut milk
100ml filtered water
40g brazil nuts
1-2 tbsp rice malt syrup/maple syrup/raw sugar
1 tbsp coconut oil
1 tsp vanilla extract
pinch pink himalayan salt
chocolate sauce
1 tbsp cocoa powder
1/2 tbsp lucuma powder
1 tbsp coconut oil
1 1/2 tbsp rice malt syrup/maple syrup
pinch pink himalayan salt
toppings optional
70% dark vegan chocolate, shaved
coconut chips
To make the sauce, place all the ingredients in a small mixing bowl. Mix until well combined. Smear sauce on the inside of two glasses. Set aside.
To make the lattes, place all the latte ingredients into a high-speed blender. Blend until smooth. Pour into a small saucepan and gently warm. When hot pour into prepared chocolate lined glasses and serve with chocolate shavings and coconut chips. Enjoy!
