vegan chocolate hazelnut cookies
100g almond meal
100g potato starch
50g pumpkin seed meal
40g organic cane sugar (you can replace with 40ml maple syrup)
30g cocoa powder
60ml maple syrup
80g hazelnuts, chopped
1 teaspoon baking powder
pinch pink himalayan salt
80g purified coconut oil, melted

Preheat oven to 150c. Lining baking tray with unbleached baking paper. In a large mixing bowl add all the dry ingredients. Mix well together. Add the remaining ingredients and mix until combined. Roll 1 tablespoon amounts of mixture into balls and flatten slightly. Place on baking tray. Bake in oven for 15 -17 minutes or until cooked. Leave to cool/or not. Enjoy!
