Seed Nut and Pumpkin Bread

Seed Nut and Pumpkin Bread

750g jap pumpkin, peeled , deseeded, cubed, oven baked with coconut oil, cooled

100g golden linseeds

150g white chia seeds

100g sunflower seeds

100g sesame seeds

100g pecans

1 teaspoon pink himalayan salt

100g spinach leaves

40g raw coconut oil, melted

6 eggs

1 teaspoon fennel seeds/or cumin seeds (optional)

Preheat oven to 150 degrees celsius. Place all ingredients in a large mixing bowl and mix by hand to just combine. Pour batter into a loaf tin and bake in oven for one hour.

ZESTY VEGAN NUT BASED CHEESE SPREAD

80g blanched almonds/ brazil nuts/macadamia nuts/pine nuts/or sunflower seeds (cashews, if your ok with FODMAPs) your choice of nuts or seeds

2 tbsp nutritional yeast flakes

1 lemon zest and juice

1/3 cup olive oil

1-2 tbsp water

2 tsp maple syrup or raw sugar optional

1 tsp sea salt

*if your ok with FODMAPs add a garlic clove or you can add 1 - 2 tbsp fresh chives finely chopped

Place all ingredients into a high-speed blender. Blend until smooth and creamy. Readjust seasoning. Store in the fridge until ready to use. Enjoy!

AVOCADO SMASH

1 ripe avocado, diced and semi mashed

2 tbsp tahini butter

1 tbsp fresh chives, finely chopped (or add 1 garlic clove if you ok with FODMAPs)

1/2 lemon, juice

1/4 cup olive oil

chilli flakes optional

Place all ingredients in a small mixing bowl. Mix until just combined. Sprinkle with chili flakes and drizzle with olive oil. Serve immediately. Enjoy?
